The A1 Concern

Scientific research by the ICAR–National Bureau of Animal Genetic Resources (NBAGR), India, has shown that indigenous Indian cattle breeds, including the revered Gir breed, possess a naturally high prevalence of the A2 β-casein (CSN2) gene. In NBAGR’s genetic evaluation, the Gir cattle studied were found to carry the A2A2 genotype, representing the traditional genetic makeup associated with A2 milk production.

Beyond genetics, clinical research has explored the difference between A1 and A2 β-casein milk. Studies published in peer-reviewed journals, including the European Journal of Clinical Nutrition, have reported that milk containing only A2 β-casein may be associated with improved digestive comfort and reduced gastrointestinal discomfort in some individuals compared with conventional milk containing both A1 and A2 β-casein.

Overnight Fermentation

Inoculated with natural heirloom starter, the milk rests overnight in clay vessels, transforming into pristine whole curd teeming with gut-healing probiotics.

Brahmamuhurta Churning
